tasty!

I always wanted to make my own veggie burgers, and I finally did it! I thought they would be complicated and fussy and I was really worried about the consistency – I thought they’d crumble and fall apart and be annoying. But they were very well-behaved and incredibly quick & easy to make. Here’s my recipe, a variation on Mark Bittman’s recipe from How To Cook Everything:
1 can black beans
1 can chickpeas
1 large onion
3 cloves garlic
1/4 cup pumpkin seeds
put all this stuff in the food processor and chop it til it’s chunky, not pureed. then mix in:
1 egg
2/3 cup flour
1 carrot, grated
1 cup corn kernels
2 teaspoons lemon juice
add salt, black pepper, cayenne pepper and cumin to taste
heat olive oil in a skillet on medium heat. i didn’t bother forming patties, just dropped a few spoonfuls of batter in the pan and it spreads itself into a nice burger shape. they cooked very neatly, did not stick to the pan at all! This recipe made about 15 burgers I think? I cooked them all & will freeze a bunch, hopefully they can be microwaved later for lunches. I was conservative with adding veggies because I figured it would cause structural problems. Now that I know this recipe produces nice sturdy burgers, I will definitely push my luck next time by adding lots more veggies.
